The Experience

You mix the dough, feel when it’s ready, roll it to the right thickness, cut Fettuccine by hand, fold Ravioli so the filling stays in. For the Tiramisù, you separate the eggs, whisk the yolks with sugar, work the mascarpone in, then mount the egg whites until stiff enough to pass the classic test: bowl flipped over your head, nothing falls.

The chef watches every step. If something is off, they show you how to fix it. Every correction is directed at you, not at the group.

It is also, every single time, a shared experience. People who arrived as strangers leave comparing notes on whose Ravioli sealed better.
